So far, our month’s been all about sustainability, and this issue of marlo monthly is no exception. We just spent two days at the Chefs Collaborative National Summit, where we learned that what’s sustainable is pretty much never going to be black and white, but always shades of gray. You’ll read about HOGtoberfest below — a weekend dedicated to the sustainability of the pig hosted by a Nantucket restaurant that goes above and beyond what even the most die-hard advocates for sustainability would require of an island restaurant in New England. Speaking of that ACK restaurant, please join us in a heartfelt ‘congrats’ to Michael & Orla LaScola at American Seasons for winning not one, but two Sante magazine Restaurant Awards — just announced this week!

As we prepare to open Island Creek Oyster Bar later this fall, it’s obvious that our path towards understanding sustainability doesn’t end anytime soon. So the moral of the story: Keep your eyes open, your mind flexible and remember that very few things in life come tied up in a neat little bow. Why should we expect defining sustainability would be any different?
