I am one of those people who can never figure out what to bring to potluck affairs and, of course, the throngs of holiday parties every December. I want to arrive with something unique, while at the same time, something relatively “safe” for all those picky eaters out there (did I mention I am one of them?!). While browsing Style.com the other day I found this awesome recipe from Katie Lee that’s both seasonal and fun! My favorite part is that it only takes 15 minutes to prep…perfect for an after-work affair or when you’re in a holiday party crunch. If you’re looking for something a little out-of-the-box yet still easy to bring to your next potluck, try this Apple-Orange-Cranberry Relish, which acts as the perfect accompaniment to many meals. Heck, it will probably spice up someone else’s boring dish! A win-win situation, if you ask me.
3 cups fresh cranberries
1 medium apple (a sweeter variety such as Gala or Fuji works best)
1 celery stalk, cut into one-inch pieces
½ cup shelled walnuts
¾ cup sugar
1 tbsp. orange liqueur
Grate the zest from the whole orange and set aside. Cut off any remaining pith from the orange. Cut the orange into chunks. In a food processor, combine cranberries, orange chunks, orange zest, apple, and celery; process until finely chopped. Be careful not to process too long, because mixture will become mushy. Add the walnuts and pulse until chopped. Stir in the sugar and orange liqueur. Refrigerate until serving time.
Makes 3 cups
